Presented here are recipes from India. Indian recipes use a wide range of spices - both dry and fresh, ranging from ginger, garlic and garam masala (ground from a combination of cinnamon, cloves, etc) to bay leaves, cardamom and saunf. Most importantly, most of these dishes use the red chillies(cayenne pepper), coriander, black pepper and cumin powders that lend the special "curry" flavor of Indian cuisine. Some curries use green chillies as well. Many of the South Indian recipes call for use of coconut paste that is as popular in Thai and Malaysian cuisines, while the North Indian recipes call for use of cream/yoghurt in many recipes. |
